Green Drywall substitute

I'm building a cabin an would like to use something other than drywall.  I keep thinking about an episode a couple of years ago where a large batch of drywall has some kind of fungus, and many homeowners were left holding the bag.  Any good substitutes for drywall?

Wooded laths and plaster?
